Bettys Launches New Cheesy Rascal: First Ever Savoury Version of Yorkshire’s Famous Fat Rascal
Bettys of Harrogate has launched the first-ever savoury version of its iconic Fat Rascal, introducing the new Cheesy Rascal to customers across Yorkshire.
The family-owned Yorkshire bakery and tea room chain, famous for its traditional Fat Rascals, has unveiled the exciting new addition to its popular Rascal range, combining rich cheeses, herbs and sundried tomatoes in a bold new recipe.
The launch marks the biggest change to the legendary Fat Rascal since Bettys first introduced the much-loved Yorkshire treat in 1983.
What Is the New Bettys Cheesy Rascal?
The new Cheesy Rascal takes inspiration from the original Fat Rascal while offering a completely different savoury flavour profile.
Made with mature Cheddar and Gruyère cheese, the savoury bake also includes sundried tomatoes, mustard and fragrant herbs. Staying true to the traditional Rascal look, each Cheesy Rascal features a playful face made from olives and cashews.
A Bettys spokesperson said:
“Baked with plenty of Cheddar and Gruyère for a wonderfully bold, cheesy punch, sundried tomatoes, a hint of mustard and a pinch of fragrant herbs add depth to its flavourful mischief.”
The spokesperson added:
“It’s a Rascal that’s impossible not to smile back at and even harder to resist. It’s hearty and irresistibly cheesy. We think it is perfect for summer picnics, lunches, breakfasts, supper and snacks.”
Bettys Fat Rascal: A Yorkshire Icon
The Bettys Fat Rascal has become one of Yorkshire’s most famous bakery products and a must-try treat for visitors to Harrogate, York and beyond.
Although Fat Rascals have their origins in Yorkshire baking traditions dating back to the 19th century, Bettys transformed the regional speciality into a globally recognised product. The rich, buttery bake combines elements of a scone, rock cake and fruit cake and is instantly recognisable thanks to its famous cherry-and-almond face.
Served warm and generously buttered, the Fat Rascal remains one of the best-selling products across Bettys Tea Rooms.
New Cheesy Rascal Sells Out Following Launch
The new savoury Rascal has already proven hugely popular with customers.
Following its launch in mid-May, the Cheesy Rascal sold out online and in Bettys branches during its first week on sale, highlighting the continuing popularity of the Yorkshire bakery’s signature products.
Today, Bettys produces more than 580,000 Rascals across its range every year, with products available in its five Yorkshire tea rooms and through its online shop.
The Complete Bettys Rascal Range
The new Cheesy Rascal joins a growing family of bakery favourites:
Fat Rascal®
The original buttery Yorkshire classic packed with currants, sultanas and candied citrus peel.
Gooey Rascal
A chocolate-filled version featuring chocolate chips and a gooey caramel centre.
Cheeky Little Rascals

Cheesy Rascal
The first savoury Rascal, packed with Cheddar, Gruyère, herbs and sundried tomatoes.
The Story Behind Bettys of Harrogate
Founded in 1919 by Swiss baker and chocolatier Fritz Bützer, Bettys has become one of the most recognised names in Yorkshire hospitality.
From its original tea room on Cambridge Crescent in Harrogate, Bettys has expanded to multiple locations across Yorkshire while maintaining its reputation for handcrafted cakes, chocolates, afternoon tea and bakery products.
More than 100 years after opening its doors, Bettys continues to innovate while celebrating its Yorkshire heritage. The launch of the Cheesy Rascal demonstrates how one of Yorkshire’s most iconic food brands is finding new ways to delight customers while staying true to the traditions that made the Fat Rascal famous.
For fans of Yorkshire food, bakery treats and Bettys Tea Rooms, the arrival of the Cheesy Rascal could be one of the tastiest food stories of the year.

Bettys drops bombshell change in Harrogate — and it could spell the end of its famous queues
It’s the queue everyone knows.
Tourists photograph it. Locals complain about it. And for many, it’s simply part of visiting Harrogate.
But now, Bettys has made a shock announcement that could change everything.
The move that will split opinion
For the first time in its history, the iconic tearoom is introducing daytime reservations—meaning customers can book ahead and skip the queue entirely.
The change launches on 30 March 2026 and applies to The Spindler Gallery inside the Harrogate branch, as well as Bettys Ilkley.
And yes… it means you could walk straight in.
“About time” — or the end of a tradition?
For years, visitors have queued down Parliament Street just to get a table.
Some love the atmosphere. Others have walked away.
Now, Bettys is giving people a choice:
- Join the queue as always
- Or bypass it completely with a reservation
It’s a move that’s likely to divide loyal fans.
The reason behind the change
Bettys says it’s responding to customers who have been put off by long waits.
Director of Operations Nicky Sellers said:We recognise that queues can be a barrier for some customers and want to offer a Bettys experience that suits everyone.”
The hidden room most people never see
Those who book won’t just skip the queue—they’ll be taken to one of Bettys’ most exclusive spaces.
The Spindler Gallery, tucked away beneath the main café, is home to the largest collection of Spindler wood artworks in the world—a detail many visitors completely miss.
What you need to know before you go
- Start date: 30 March 2026
- Where: Harrogate (Spindler Gallery) + Ilkley
- Booking: Online only
- Cut-off: 9am on the day
- Walk-ins: Still allowed
One thing is clear…
Bettys isn’t getting rid of its famous queues.
But for the first time ever, you might not have to stand in one.
And that changes everything.

The story of Bettys 1915 – Frederick Belmont is Born
Moving around Yorkshire, Fritz begins trading under the name “F. Belmont, Chocolate Specialist.”
He falls in love with the region and adopts his new identity — Frederick Belmont — marking the start of a new chapter in both his life and British café culture.
1919 – The First Bettys Opens in Harrogate
Frederick opens the first Bettys Café at 9 Cambridge Crescent, Harrogate.
The takings on the very first day are just £30, but the warmth, quality, and craftsmanship quickly make Bettys a household name.
As for the name “Bettys”? No one truly knows where it came from — it remains one of Yorkshire’s sweetest mysteries.
1922 – Bettys Returns to Bradford
Frederick opens a second café at 42–44 Darley Street, Bradford, on the very site of Bonnet & Sons — the place where his English journey began.
Six years later, he opens a Bettys Ballroom nearby, bringing music, dancing, and delicious treats together under one roof.
1927 – Afternoon Tea Arrives
Bettys introduces what we now know as Afternoon Tea, though it was first advertised as “Yorkshire Tea” — priced at 1 shilling and 3 pence (1/3).
A tradition was born that continues to this day.
1930 – Bettys Leeds Opens
Betty’s Cafe
Bettys arrives in Leeds to great fanfare. Frederick proudly notes in his diary:Leeds is proving a great success. We opened with a great noise and in good style.”
1937 – The Elegance of Bettys York
The iconic Bettys York opens, featuring interiors inspired by the luxurious Queen Mary ocean liner — a nod to Frederick and his wife Claire’s voyage on her maiden journey the previous year.
It remains one of Yorkshire’s most elegant cafés.
1939 – Wartime Memories
With the outbreak of World War II, Bettys York becomes a popular meeting place for airmen stationed nearby. Many inscribe their names on the now-famous “Bettys Mirror” using diamond-tipped pens — a tradition that preserves their memory to this day.
1952 – A New Generation
Frederick Belmont passes away in his Harrogate office. His nephew, Victor Wild, takes the helm at just 29 years old, carrying forward the legacy with passion and innovation.
1962 – The Birth of Bettys & Taylors
Bettys acquires C.E. Taylor & Co, a respected tea and coffee merchant.
The merger forms Bettys & Taylors of Harrogate, blending the best of baking, tea, and Yorkshire tradition into one iconic brand.
Betty’s Cafe
1964 – Bettys Comes to Ilkley
The Taylors Café Imperial in Ilkley closes and reopens as a Bettys Café & Restaurant, bringing the charm of Bettys to the Wharfedale valley.
1971 – Bettys Northallerton Opens
A new Bettys Café Tea Rooms opens at 188 High Street, Northallerton, introducing the brand’s signature blend of elegance and warmth to another Yorkshire town.
1974 – A Change of Pace
As city life grows busier, the Bettys cafés in Leeds and Bradford close, allowing the business to focus on locations that capture the calm and charm of Yorkshire life.
1976 – A Harrogate Homecoming
Bettys Harrogate relocates to 1 Parliament Street, the former site of Taylors Café Imperial.
This becomes the flagship Bettys Café Tea Rooms — and remains a must-visit for locals and visitors from around the world.
2000 – The Bettys Craft Bakery Opens
To continue Frederick’s commitment to craftsmanship, Victor Wild opens the new Bettys Craft Bakery, just a short distance from the original 1922 bakery.
Betty’s Cafe
2001 – Sharing the Secrets
The Bettys Cookery School opens its doors, offering classes for everyone — from home bakers to professional chefs — sharing the art and joy of Bettys baking traditions.
2019 – Celebrating 100 Years of Bettys
A century after the first café opened, Bettys celebrates its 100th anniversary.
On 17th July 2019, Victor and Lesley Wild unveil a commemorative plaque at Bettys Harrogate, honouring Frederick Belmont, whose vision, skill, and spirit continue to define Bettys to this day.
A Legacy of Quality, Craft, and Yorkshire Warmth
From a Swiss apprentice to a Yorkshire icon, Bettys Harrogate stands as a symbol of tradition, craftsmanship, and hospitality.
Every cup of tea, every handmade chocolate, and every slice of cake tells the story of Frederick Belmont’s enduring dream.
